Healthy Apple Cinnamon Pancakes

I know that it’s June… buuuut I’m sharing an apple cinnamon recipe with you. As far as I’m concerned – fall flavors are applicable year round. This is one of the first recipes that I ever posted on the blog, and it’s one of my go-to breakfast recipes for lazy Sunday mornings.

Pancakes are without a doubt my favorite breakfasts. Growing up as a kid, I loved eating them. My mom would make us homemade ones on the weekends, and I can always remember being so excited to have them. When I started eating healthier I stopped eating them almost all together.

Then I got creative… because who wants to give up delicious, fluffy pancakes in the name of being healthy?? Not me.

I found out that if you skip the butter and oil, swap the white flour for oat flour, sugar for honey, and add in some chopped fruit – you’ve got a pretty healthy recipe!

Apple Cinnamon Pancakes

Ingredients
  • 1½ c oats (ground)
  • 2 tbsp ground flaxseed
  • 1 c milk
  • 2 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp nutmeg
  • 3 tbsp honey
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ c chopped apples
Instructions
  1. Pulse the oats in a food processor until they are finely ground (texture of flour).
  2. In a large bowl add in oats, milk, flax seed mixture, egg, milk, spices and apples
  3. Bake on a griddle or in a frying pan until light brown.
  4. Top with sauteed apples and enjoy!

You can add in anything to these pancakes – fresh berries, chocolate chips, etc. I personally like the flavors that the apples give, but the base of the pancakes are so simple- they really go with anything.
