In a perfect world, ice cream would have the nutritional value of a bowl full of raw broccoli. Unfortunately.. it doesn’t. In fact.. it really has NO nutritional value (Bummer) You could say it has some calcium.. but even that is a stretch. Most ice creams are high in fat, high in sugar, and contain a million mystery ingredients that you need a PhD to even spell. There’s no denying that ice cream really is not the best snack choice when it comes to trying to eat healthy.
Regardless, if it were up to me.. I’d eat ice cream everyday.. whether it was 100 degrees out or 30 degrees out.. it doesn’t matter cause I love it. I’ll also eat pretty much any flavor -I’m not discriminatory towards any dessert. My absolute favorite flavor is Peanut Butter Chocolate. A local ice cream shop makes this flavor that has decadent, creamy peanut butter ice cream with delicious chunks of chocolate… talk about heavenly!
Tyler and I go out for full fat, sugary, delicious ice cream or frozen yogurt once a week. It’s our little treat – and I look forward to it every week. (Like I’ve said before, we’re full believers in the 80/20 rule- and everything in moderation ;) ) However, during the other 6 days out of the week when I’m not eating the delicious dessert.. I ALWAYS crave it!
Yesterday I decided to have a go at making my own healthier version of Peanut Butter Ice Cream. While it isn’t the same as real ice cream, it is the perfect treat to hold me over til our next ice cream date :) Plus, it’s only 3 ingredients, dairy free, and takes about 2 minutes to make!
Peanut Butter Chocolate ‘Ice Cream’
-1 large frozen banana
-1/2 Packet Bowflex Body Protein+ Peanut Butter Shake Boost
-1 tablespoon TruVibe Organic Cacao Nibs
Allow the frozen banana 10 minutes to soften. Blend with 1/2 packet of Peanut Butter Shake Boost. I blended mine in my NutriBullet, which is pretty strong. You can add water if necessary to blend smoothly. (It should be a thick consistency, so don’t add too much water or over-blend). Stir in cacao nibs, and place back into the freezer for 15-20 minutes for a more ice-cream like consistency.
I ate mine right out of the blender because I’m impatient… but when I made it again and froze it for a few minutes it was even better.
